Parmesan Chicken & Lemon Fettuccine
I serve this fabulous Parmesan Chicken with Lemon Fettuccine but it is indulgent and quite rich! Food before the firing squad! Eh Ricky? As a compliment to this dish and to cleanse the pallet, cut slices of mango and drizzled them with extra virgin olive oil, freshly cracked black pepper and dust with cinnamon!
Tips for the Parmesan Chicken - make the fresh bread crumbs in food processor or blender (dead simple). Also when batting out the breasts you may want to wrap them in cling film first as it gives you more control.
Lemon Fettuccine - this recipe feeds 3 to 4 not 4 to 6
